About genjutsu immunity.... we still don't know. But genjutsu works on edo tensei so....
I don't remember any edos being under genjutsu, but Sasori is a puppet, puppets can't be put under genjutsu..

I believe Sasori will win the majority of times. Iron sand can be used just as much on defense as on offense. And really Itachi's only hope is to hit Sasori's heart with Amaterasu or the Sword of Totsuka. So yes, Itachi has a chance, but considering that Sasori knows his weakness, he WILL defend it. Against Chiyo and Sakura he was cocky and didn't defend it, but against a far more formidable opponent in Itachi he most likely would. That would at least deal with Amaterasu, seeing as how any type of protective barrier would take the flames and not his heart. And since he is a puppeteer, he fights from a distance. The sword of Totsuka has a range, and so he could easily control his puppets out of the range of the sword. Once the 100 puppets are out, Itachi wouldn't have time to focus on Sasori himself. Also he would certainly lose his stamina far faster. So at that point, the battle belongs to Sasori.
So yeah, Sasori would definitely be able to outlast Itachi with combination attacks from his many puppets. So Sasori has the upper hand and would beat Itachi I'd say...6/10 times.
Honestly I don't see sasori dodging amaterasu. You guys are putting sasori with his last resort, dance of a hundred puppets or something not taking into account that they are all bound by chairs strings something the sharingan can see. Itachi is one of the fastest characters in the narutoverse as sasori is not. The databook is inconsistent we all know that. Its a level cap on there, you honestly think Itachi, sasori, orochimaru, and minato are all the same level of genius? Im pretty sure a 1 or. 5 can not be taken literally here. I can see the chakra strings at the epic center (I think they come from his chest if im not mistaken) being ignited by amaterasu, therefore leading to sasori forcing him to cut his strings loose from himself. Amaterasu burning the threads leading to the puppets.
His "heart" as you guys say is the key factor here. Let's be real, its not as if it doesn't have a special marking on it. And since it is his life force im pretty sure it has chakra, something to distinguish it, therefore its going to have color looking through the sharingan. This is not too much of a reach to think that Itachi can notice and deduce that it will be a vital point, I mean it is in the place of an actual heart afterall. Now how will sasori exchange puppet hosts if amaterasu is not already burning them or close to burning them coming from the chakra strings.
That should eliminate all them, making it a 1v1 again. Now I ask what will sasori do now? The thing is sasori is known for his poison, he has to try and hit Itachi with a blade, easier said than done. You guys can debate on the rest. I just see Itachi winning sorry if that doesn't appease to your senses. I mean naruto is about paying attention to the details in battle,
