So Orochimaru the man, the LEGEND is currently doing something else.
But it seems Orochimaru has moved on from chasing after the Uchiha.
It could be the fact that he concluded something with Sasuke during the war arc or even more likely he is after the Ootsutki themselves.
Reason?
Well look at who he is currently interested in that he sent Mitsuki to either follow or capture.
First is Boruto Uzumaki... In the Mitsuki one shot we learnt that Orochimaru later sent Mitsuki on a mission to find himself by observing Boruto.
In the anime we also learnt that Mitsuki reports back to Orochimaru, every single night about Boruto.
Second is Sumire.... In the anime we learnt that Orochimaru later sent another side mission to Mitsuki to observe Sumire but later changed that mission to kill her and capture her body.
What connects the two?
Kaguya and the Ootsutki.
Sumire has some Kaguya genes implanted in her and has the Nue.
Boruto has some Hamura and Hagoromo genes in him and has the Jougan.
Orochimaru has moved on from just the Uchiha (which is only one dude) to the Ootsutski in general. He knows things that others don't, besides Toneri since that dude knows everything.
Beyond genetics he also wants emotional growth and wants Mitsuki to go through something he never went through...

In Gaiden Sarada and the Shin were running around but Orochi gave no shits on either of those two....
So PLEASE stop thinking Orochimaru is still the same old dude after some old school stuff.
He moved on and you should too.
He has some pure body genetic warrior like Mitsuki and a new body for himself too.
