Kakuzu is patently superior to Mei

in scene 2, Kakuzu pancakes Mei into the nearest wall w/ atsugai, destroying the foyer room in the process.

Except that it's a gaseous technique implying that it can spread a fairly wide distance along with the fact that it's not even a Futon. It's a Boil Release which implies that it's a superior element compared to Futon anyways. Since Kakuzu's fairly slow, she can likely weaken him due to it's acidity or at least cause his wires to corrode which hurts Kakuzu here considering he heavily relies on it to strike his opponent, esp. in his Final State.

He has a 4 in the DB For speed and has shown perfectly adequate enough reactions to deal with the lava.

Kakuzu wins this mid/high diff,

--hidden/acid mist gets blown away by fuuton, her yotons are evaded, and her suitons are tanked by domu, whereas kakuzu can still use fuutons and raiton gian to overwhelm mei,

--once kakuzu closes the distance, mei is done for considering how his tendrils give him good range, added to the fact that his domu enhanced attacks would pulverise her completely,

Attempting to blindside your opponent hardly constitutes as "not even trying."

Why isn't Lava hitting when Mei can easily back him towards a corner with it similar to how Shikamaru controlling Hidan could? If Kakuzu was really that fast, backing Kakuzu towards a corner with Shikamaru's lackluster speed wouldn't have succeeded yet it did. You're wanking Kakuzu's speed here. Hell, even against Madara, the Lava Release managed to cover most of the distance separating the 2 before Madara managed to evade it.

He could never hit Kakashi physically. His best feat was grabbing Kakashi with his tentacles after he was overwhelmed by his Katon + Futon combination. His other feat of blitzing Kakashi had nothing to do with pure movement speed, so I'm not sure why it matters. Mei's Lava Release simply melts through Kakuzu's wires and eventually gets enveloped by her Lava Release considering it enveloped Madara's V1 Susano'o.

It hit Madara's Susano'o. Even then, what evidence is there that suggests that Kakuzu can evade something that spreads quickly enough that warrants a statement from Madara that expresses his concern of making physical contact with it?

Kakuzu can't evade Mei's lava at close range
Kakuzu isn't evading free flowing lava release at close range. Not when . Not when instead of simply sidestepping despite sidestepping being able to conserve chakra and him having already before. Kakuzu isn't as fast or reflexive as any 3 tomoe Uchiha in the manga, so I doubt he'll be able to evade as long as Mei is within 10 m from him.

Regardless, Kakuzu can fight from 15+ m where he'll easily dodge the lava or repel it with Atsuugai or overpower it with katon + fuuton.
Mei can defend herself from Kakuzu's attacks
Kakuzu's katon + fuuton combo is easily defended against with water pillar considering is on par with and the fact that katon is weak to suiton. Kakuzu's fuuton is also getting stopped by water pillar because both techniques are of an equal scale and water is more dense than wind. Raiton gian doesn't have many piercing feats and its hyped to be able to pierce through non chakra enhanced boulders which aren't as large as Mei's chakra enhanced water pillar. Not to mention that when raiton collides with suiton, it defuses and conducts all throughout the suiton so raiton gian will lose its shape anyway.
How Mei hinders Kakuzu and makes him unable to avoid getting doused with yoton
Mei's water dragon is her fastest long range attack as she spits much more water at a given time than lava. It in a smaller amount of time it took for jinton to expand. Not to mention Mei has over her water dragon allowing her to manipulate its direction after spitting it out so Kakuzu will not be able to evade wherever he may be. He'll have to rely on doton domu to defend himself because should be able to pierce through Kakuzu's threaded body, taking out a heart, unless doton domu is used. Nevertheless, if domu is used, Kakuzu becomes a sitting duck as he can't move while using it thus allowing Mei to smash Kakuzu into the ground close to herself, allowing her to douse his body with lava without him being able to repel the lava with a jutsu in time.
CQC is a death sentence for Kakuzu
If Kakuzu attempts CQC with taijutsu or his threads, he'll end up getting doused with yoton or smacked aside by her suiton given how despite him already being in motion which goes to show Mei can cast jutsus faster than Sasuke can move short distances. Also Tsunade sent Madara's susanoo flying yet Mei managed to get to Tsunade's location, which nigh instantly reached Madara's susanoo despite it being sent flying when . All of this goes to show Mei's foot speed, reactions, jutsu travel speed and jutsu execution speed.
Yoton>Doton domu, hearts and threads
It is doubtful that Kakuzu can survive getting doused in yoton. It's offensive power was hyped by Madara ( )( ) and even did some, albeit negligible, damage to full body susanoo on two occasions ( )( ).

Kakuzu may potentially outlast Mei
Kakuzu has more chakra than Mei as he showed no signs of exhaustion spamming high level ninjutsu and this was all after sealing the two tails. Regardless, a battle that drags on won't totally benefit Kakuzu as he'll lose his firepower as the battle goes on.

Verdict
Mei wins high difficulty IMO.

Youton increases in speed when used at shorter distances (DB4 fact). Not to mention that Lava Globes are WAY faster than Melting Apparition and Mei can use like 7 separate globes in 0.5s time window.

Futton destroys Domu neg diff (Futton destroys all chakra-based substances and defenses - DB4 fact).

Futton spit to the head means GG Kakuzu - that's why he should never engage CQC with Mei.

Not to mention that Mei can counter Kakuzu's elemental barrage with ease. Gian is simply dodged, Futton+Katon combo is countered with Water Pillar, while it can also be used as a tool of offense to catch Kakuzu off-guard and then follow up with Water Dragon straight into Youton or Futton to the face.

The only thing that makes things complicated is the fact that Kakuzu is a little better at multitasking.

I believe that either one has a chance to win, but I'm leaning towards Mei.

Sasuke dodged lava globs with his back turned to Mei and without any intel on Mei or her lava. On the other hand, he resorted to using ribcage susanoo against Melting Apparition with his face turned towards Mei. Not to mention the quantity of lava Mei spits is a lot greater when she uses Melting Apparition so a much larger amount of lava travels in a shorter period of time unlike when she uses her lava globes.

Globs weren't aimed at Sasuke and the 'work surface' of each is obviously smaller than that of Melting Apparition. But at CQC it's way faster to spam several globs that can cover different areas than to use big-ass lava stream that can be dodged.

But it's just my opinion :D
