Bee wins the second scenario without a doubt. I'm not sure on the first, however.

Team Uchiha wins first scenario med-diff, the fusing won't do shit, both could beat him in a 2 vs 1 Taijutsu battle, Bee can't do Water Dome.
Bee wins second scenario tho', he is faster and they need to use Ninjutsu, which is ineffective because he can absorb chakra.​

I should have been clearer. Hachibi can still assist Bee in breaking genjutsu and Bee can use tentacles in base form like he was shown to do.

I'm assuming Hachibi will still help with genjutsu. Brothers should win. Even if Hachibi releases genjutsu, in the manga we seen that Itachi managed to buy couple seconds before that happened. Both brothers are quite fast, they could create an opening for a second with genjutsu while killing him in close combat.

Uchiha one scenario one. They actually stomp if you restricted Hachibi altogrther, since Bee got caught in genjutsu by both of them in canon and needed the Bijuu to break him out of it.
In scenario 2 they lose. Nothing on their arsenal to take Bee down, Sasuke wont have enough prep tine for Kirin with Bee pressuring him and whitout Tsukuyomi all of Itachi's genjutsus are worthless.

What's the point of Bee's Taijutsu if he can't catch Itachi with it? He couldn't even trace Itachi's speed.
