One thing Madara definitely has on the sage is a lifetime of experience fighting in battle. Anyone that's seriously done martial arts realizes that experience and muscle conditioning count for a lot in a real fight. The Sage was a man of peace. I doubt he'd be able to beat Madara in a one-on-one battle... even in his prime.
