If he wanted Kakashi's sharingan, he could easily have taken Obito's anytime he wanted. I doubt he cares about taking anyones sharingan when he has the opportunity to have his original 2 rinnegan back.

I believe he just merely needs a sharingan so he may just want Kakashi's for now while the other zetsu is using Obito. He said the same thing to Sasuke earlier about stealing his eye for collecting or as a "in between" thing till he can get his original eye back.
